Chimichurri sauce with pepper and tomato

Ingredients:
1 red pepper (chopped very finely)
1 large tomato (peeled, seeded, chopped)
1 onion (chopped very finely)
2 cloves of garlic (chopped)
2-3 teaspoons parsley (chopped)
125 ml oil (rape seed or safflower oil)
250 ml wine vinegar
1 teaspoon salt
1 teaspoon of ground black pepper
1 teaspoon oregano

 

Instructions:
Mix everything together, allow to infuse for at least 12 hours in the fridge. Enjoy!!
